Don’t get me wrong, I think it’s wonderful they are going to take yellow food dye out of macaroni & cheese but come on.  If you are going to try to do something meaningful, don’t you think you should get the GMO out first?

Kraft Yellow Petition Update – 175,000 signatures and growing

We want to take a moment to share that this petition is honestly much bigger than just macaroni and cheese or even Kraft. There are many large US companies that use artificial dyes – as well as other additives like GMOs – in their food products here  that are not used overseas. Everyone from General Mills to Kellogg’s to Pepsi,  McDonald’s  and of course Kraft, have formulated safer, better versions of their products for other countries and this petition is a vehicle to let these companies know it’s time for American consumers to get the same.

I quit buying their macaroni & cheese, in fact I’m in the process of going all organic because I don’t think we should be forced to eat something that is killing our bees and butterflies.  This stuff is dangerous and should be banned but for now, I’ll settle for labeling.

If you’re a parent and you’re still feeding your children this stuff, shame on you.  Your children will have health problems and most will die prematurely because of your decision.  Think!  Do your homework.  Protect your family against this invisible intruder.  Just because you can’t see the danger, doesn’t make it not real.

I know it’s costly to buy organic but for most of us, it’s just a matter of eating a couple more meals at home and being smart about your purchasing.  The price of organic is coming down, start small.  You didn’t start buying it all at once, you don’t have to quit cold turkey but think about what you’re eating.  Make a conscious  decision to eat healthier, less fast food and more natural stuff like homemade macaroni & cheese, instead of it’s GMO counterpart.  If you don’t buy it, they won’t make it.  I promise you that.

So, spend your money wisely.  Know the companies that you buy from, call them and ask if they use GMO products.  Let them know that you care about what you eat.

Not just for baking!

I was updating the section on Making Homemade Baby Formula tonight, when I realized I still have a few secrets I haven’t shared with you over the years. I know it’s hard to believe but it’s true.

Last year, the whole household came down with the flu. I was passing out vitamins, liquid supplements and cough syrup at the speed of light. If you’ve ever tried giving kids their medicine, you know how much fun it is to clean out those measuring scoops. Forget about those plastic cups too. They are made of cheap plastic — you can never be sure they are really clean.

Well, I found the perfect solution, I use these terrific little  measuring cups for everything. Yes, we’ve broken a few of the larger (5 oz.) cups  but the smaller shot glass size are very sturdy — I keep at least four on-hand. The entire family uses them.

Apparently, they are becoming quite popular, because each time I check there are more selections available. I can hardly wait to buy a couple more.

These measuring cups are perfect for measuring medicine, liquid supplements, measuring seasonings, converting recipes and I am sure I’ve forgotten a few other uses. I even have a heavyweight plastic cup with feet, for the little ones.

I just found this measuring cup for those larger jobs. It appears to have a measure for every thing imaginable.

Grandma always said it was important to have the right tool for the job and she was right. I find myself using these cute little glasses almost everytime I use the kitchen.

I know when I purchase new kitchen items, I always wonder, “How often will I really use this item?”  When I bought my new Vollrath (Tribute)  cookware, I was thrilled with every piece. Even today, it feels good to cook with these terrific pans. I am no less enthusiastic about these measuring cups.

Cajun for Thanksgiving!

Prior to last year I had never heard of Turducken. As the holidays are fast approaching, I find my thoughts are drawn more and more to that luscious mixture of birds.

Turducken is just like it sounds, a taste-tempting mixture of turkey, boneless duck and boneless chicken, complete with corn bread stuffing between each layer of meat. It makes my mouth water, just thinking about it.

Last year a very dear friend and client of ours, sent us a wonderful 15 pound Turducken and to be quite honest, when it arrived, I was less than pleased. For starters there are only three people in our family – it would have taken forever for us to eat a bird of that size. Top that off with the fact that I had never heard of a “Turducken”.

When I found out it was filled with Creole style cornbread stuffing. I was ready to give it away, thank the sender and never mention it again. I am so glad that I don’t always follow my first instincts.

We ended up thawing it out (it comes frozen) and delivering it to the host of our Christmas family dinner. She carefully followed the directions on the package – it was cooked to perfection and I am pleased to report, everyone totally loved it. I must say it was the most creative gift I have ever received for Christmas – not to mention the tastiest.

The Turducken easily fed the twelve of us, with plenty left over for snacks. The bird was moist and tender. The duck portion wasn’t my favorite part but my husband enjoyed every morsal. My favorite part was the stuffing, it was by far the best stuffing I have ever had the opportunity to enjoy. Shhhhhh, don’t tell my mom.

If you are looking for something extra special for Thanksgiving or Christmas dinner, I highly recommend you try the Turducken. I will be ordering ours soon. What a terrific idea. Who thinks of these things anyway?

What is a Turducken?

Turduckens – turkey-duck-chicken. This is an amazing meal. We take a whole turkey, whole duck and whole chicken. We de-bone all three. We put the duck inside the turkey and then the chicken inside the duck: The best cajun Turducken ever made along with some of the best cajun specialty foods in Louisiana.

We start with a 12 to 14 lb turkey, debone it flipping it inside out, season it with a cajun seasoning, and then stuff it with the finest Louisiana crawfish, shrimp, and rice stuffing. Then it is stuffed with a boneless chicken breast, a boneless duck breast, and more rice stuffing throughout the rest of the turkey.

Finally seasoned pork sausage is inserted between the duck breast and turkey. The final product is sewn together and ready for the oven. This product is as much a conversation piece as it is delicious! As they say in Louisiana, the flavor of the homemade seasoning is incredible, “bon appetite.” The Turducken will ship in a perishable container frozen solid.
